Project Overview

Dr. Simsek is the leader of the cereal and food biochemistry research laboratory at North Dakota State University. Her research focuses on;

  • Application of HPLC, UPLC, HPAEC, GC-MS, and NMR in structural studies of carbohydrates and polysaccharides
  • Metabolic profiling studies
  • Food and Health
  • Starch Chemistry and Digestibility
  • Application of NMR in Food Chemistry

Research Mission

To develop a nationally acknowledged laboratory of excellence in the broad field of Wheat Quality & Carbohydrate Research by performing integrated high-level fundamental, strategic research, as well as related application oriented research, within the scope and mission of North Dakota State University.
