Dr. Simsek is the leader of the cereal and food biochemistry research laboratory at North Dakota State University. Her research focuses on;
- Application of HPLC, UPLC, HPAEC, GC-MS, and NMR in structural studies of carbohydrates and polysaccharides
- Metabolic profiling studies
- Food and Health
- Starch Chemistry and Digestibility
- Application of NMR in Food Chemistry
To develop a nationally acknowledged laboratory of excellence in the broad field of Wheat Quality & Carbohydrate Research by performing integrated high-level fundamental, strategic research, as well as related application oriented research, within the scope and mission of North Dakota State University.
